Freeze-drying technology originated in the 1820s. A Russian scientist successfully carried out small tests of FD products in the laboratory. The birth of freeze-drying technology has fundamentally solved the problem of astronauts’ food preservation and nutrition in space. It’s then applied to the aerospace filed  by Russia, United States, and China, thus it’s also called “Space Freeze-drying Technology”. Vacuum freeze-drying technology gets more and more favored by people due to its incomparable advantages than other drying methods. In addition to the medicine, biology, food, blood products, active material fields where FD technology has been widely used, its application scale and fields are still expanding. Therefore, vacuum freeze-drying has become an important application technology in the 21st century, and it is the most advanced technology in dehydration food industry.

The traditional drying methods like sun drying, hot-air drying, spray drying, and vacuum drying, are all done under high temperatures. Such dried products get shrunk and rigid, hard to dissolve in water. Some ingredients get oxidized, most of the volatile components are lost, the heat-sensitive substances such as protein and vitamins will be denatured, and microbes lose their biological activity. However, freeze drying is basically done under the temperature of -30~50℃, then the solid water sublimates directly under vacuum environment. The temperature is raised above 0℃ in the end to further lower the residual moisture, but will not exceed 40℃. Freeze-drying can excludes 95-99% moisture from the fresh food.
